I am planning on building a cutting board for my kitcheen and wondering what type of wood I should use any pitfalls I should be aware of as this will be used for food preparation.

Roy, you definately want to use a hardwood and the end grain is what you want to be exposed for the cutting surface.  Also, a good waterproof glue etc.  I have some pics of some that I have made on my page.
