I made one a year or two ago and thats how I made the pattern also, That is a really sharp table.
Well...that was about 35 years ago...but as I recall.
I cut 8 each 2" wide strips of walnut and oak about 17" long (4 of each)
Those were glued up in alternating stripes to make a 16" X 17" flat, striped, board.
I planed that flat.
Then I cut that into 2" wide strips at 90-degrees to the original.
Then I flipped every other board 180-degrees and glued the assembly back together, which creates the checkerboard.
Then I planed it again and sanded it.
In the 35 years since I made it, it warped really badly, so to make the current project I had to get it flat before I could do anything else. I made up a 22" square 1" Oak backing board, and glued the chessboard flat to it. Then I ran screws through the backing board into the chess board for additional rigidity. I screwed and glued all the table framing too, so that should keep everything flat and "warp" free...I hope.
