I took a look at the link you posted for your Charlie Brown Chevron Bench.
You have done well making the bench and finishing it.
You may be interested to know that by using a 90 deg chuck or a small hex socket drive you can get into the small internal spaces and use your Kreg Screws.
I made a "Mushroom Stool from recycled pallet material and used Kreg screws inside it.
All you do is partly assemble sections normally then use the Kreg bit in a wrench to complete the work.
I recently made a "Dolls Cot" again from recycled material and again because of the small internal dimensions could not use my drill to drive all the screws, only this time my 90 deg chuck would not fit either so after attaching the two sides I used a small hex wrench to finis the job.
I agree with you regarding the stripping of the screws,its easly done with power tools.
One method I use is to drive them to stop,( as you suggested) then finish by hand in a socket, that way you can feel the exact pressure to want to apply on the screw.
