My version of a coffee table we liked at Restoration Hardware. Was going to finish in Minwax Early American as wanted almost a natural/light finish - but having tested that stain on a sample piece not sure about it now. Any suggestions for a natural or light colored stain?

Andy,  I recently posted photos of a project I just finished.  You can find it on my photo page or do the search for secretary desk.  The project was made from Oak ply and solid oak.   I searched various types of stains before deciding on the Danish oil.  It is claimed to be one of the easiest finishes to apply but it does not offer a hard finish to protect from dings and bangs.  That is why I also followed up on the wipe on poly.  My first time use so I cannot say how well it will hold up over the long haul.   I would also check out gel stains.   General finish gel stains come highly recommended.   I found many suggested staining tips doing a search on you tube.   I hope this helps.

Thanks Rita.  Do you have a picture of what that piece looks like with the Danish oil?  A link on here perhaps?  Thanks.

This looks great Andy!   I bet it is one heavy piece of furniture!  Have you considered using a Danish Oil?   I just finished a piece using Golden Oak Danish Oil and I followed it with wipe on poly in satin once the Oil had time to cure.  Loved the ease of application and the oil comes in various shades.  The wipe on poly was a cinch to use as well and might be easier to apply on your curved areas.   Thanks for sharing your work!
