I had read an article in Fine Woodworking about fuming white oak. I have been trying to find that issue today, but haven't been able to find it. The main thing is to get a strong ammonia solution, which I found on line at a company that handles chemicals for fine arts called artchemicals.com. I got ammonium hydroxide 26% solution from them. I used regular plastic sheeting to build a tent to enclose the piece, and actually taped a piece of plexiglas into the tent so I could see how it was looking. I checked it every couple of hours, and kept it in for about 20 hours, as I recall. I had done some tests on scraps before I did the piece itself.
I hope that helps - it really does a nice job on white oak. I just tried fuming a sample of cherry a few days ago, and it darkened it just very slightly - it turned a little gray, actually. The white oak does much better.
