That's what i did with the rails and stiles for the doors and the frame members, the real work was flattening the panels after glue up, i jointed and planed the boards to a uniform thickness but after glue up there were some dips and hollows. not a big deal after some belt sanding and a rub with a jack plane. The panels were slightly less than 7/8'' of an inch when i was finished so next time i'd joint and plane the boards to 15/16'' and after glue up i'd sand and plane the panels flat to a finished thickness of 7/8''

Let me try to make your life easier so you can put that sander down! Rip your boards 1/8" too wide, and then send them through the planer in groups of at least 3. You will have perfect widths and will only need a little hand sanding
