does anyone have any ideas on how to attach to the grill trolley that doesn't involve making holes in it. I'd planned on putting it on as a tabletop, but it's too nice to drill into!

The only thing that I can think of that you may use is some form of double sided tape, but I can't guarantee that it will work forever, but it should work for what you need, as long as both surfaces are clean. Other than that, I am at a loss. You could always build a butcher block top for a tabletop, I could get you plans for that. I have a few cutting board/butcher blocks on my page.
I would try laying a sheet of the non skid shelf liner between the old top and the new top. This rubberized and usually keeps anything wood from sliding. Any of the woven shelf or toolbox liner should work. Here is a link!
