Question i need pocket holes to join my table legs and apron . What setting would I set my kre jig up for a 3x3 I will be using 1 inch thick oak for the apron. And I will beef up the top of it with boards running across

Set the jig to the actual dimension of the wood you are drilling into.  

In this case, I would attach the apron to the legs (and top?) using the apron's actual thickness (you state 1", is it actually ¾"? ) 

The jig settings are for the board thickness into which you are drilling.  To what the drilled board is being attached will determine the screw length.
